It would be a lot of fun on the bike, though. I've always wanted to do a multi-day bikepacking adventure around the Shawnee National Forest.

Always wanted to go to Utah to do this, but figured this was a lot cheaper and so good first time trying it.

There is a ride across MO on the Katy Trail that is called BAM. It is a multi day ride on a former rail trail so there is minimal elevation gain. Lots of fun had each day.
